THE SUMAC REEF ORBS
(Our Play on Balkan Kofta with Prawn Architecture)
Ingredients: 400g Prawns (minced to a paste), 100g White fish (minced), 1 tbsp Sumac, 1 tsp Chili flakes, 1 tsp Salt, 2 cloves Garlic (minced), 1 bunch Spring onions (minced), 1 Egg white, 1 tbsp Tahini...
Ingredients
- 400g Prawns (minced to a paste)
- 100g White fish (minced)
- 1 tbsp Sumac
- 1 tsp Chili flakes
- 1 tsp Salt
- 2 cloves Garlic (minced)
- 1 bunch Spring onions (minced)
- 1 Egg white
- 1 tbsp Tahini
Cooking Method
- The Build Knead prawn paste, fish, and architect veg until tacky.
- The Bloom Whisk egg white and tahini with the sumac; fold into the reef to release the tart oils.
- The Scorch Form into small cylinders; flash-fry in oil for 2 minutes per side until charred and pink.
- The Final Flourish Serve with raw lemon wedges and a dusting of extra sumac.
