THE SUMAC RED CRUSH

Ingredients: 3 Tomatoes, 1 Cucumber, 1 Red onion, 1 Avocado (diced), 1 tbsp Sumac, 1 tsp Chili flakes, 1 tsp Salt, 2 tbsp Lime juice, 3 tbsp Extra virgin olive oil, 100g Feta (crumbled)...

Ingredients

  • 3 Tomatoes
  • 1 Cucumber
  • 1 Red onion
  • 1 Avocado (diced)
  • 1 tbsp Sumac
  • 1 tsp Chili flakes
  • 1 tsp Salt
  • 2 tbsp Lime juice
  • 3 tbsp Extra virgin olive oil
  • 100g Feta (crumbled)

Cooking Method

  1. The Architect Dice all vegetables and avocado into uniform cubes; combine in a bowl.
  2. The Bloom Whisk lime juice, oil, and spices with a tiny 5ml splash of warm water to wake the tart sumac oils.
  3. The Marriage Toss the veg and avocado in the spiced citrus silk; the feta will soften into the architecture.
  4. The Final Flourish Top with raw fresh coriander matchsticks and a final rain of raw sumac.
