THE SUMAC BEEF ORBS
(Our Play on Ćevapi with a Levantine Sting)
Ingredients: 600g Beef and Lamb mince mix, 1 tbsp Sumac, 1 tsp Garlic powder, 1 tsp Salt, 1 small onion (pureed), 1 tsp Baking soda, 50ml Sparkling water, 1 tbsp Pomegranate molasses...
Ingredients
- 600g Beef and Lamb mince mix
- 1 tbsp Sumac
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 small onion (pureed)
- 1 tsp Baking soda
- 50ml Sparkling water
- 1 tbsp Pomegranate molasses
Cooking Method
- The Build Knead meat with onion, garlic powder, and baking soda until tacky.
- The Bloom Stir sumac into the sparkling water; fold into the meat to release the tart oils.
- The Rest Chill for 4 hours to let the architecture set.
- The Scorch Form into small cylinders; grill on white-hot heat for 2 minutes per side until charred and rock-hard.
- The Final Flourish Drizzle with raw pomegranate molasses and serve with raw onion rings.
