- 500g Beef mince
- 1 Large onion (pureed)
- 50g Sultanas or Raisins
- 1 tsp Cinnamon
- 1 tsp Allspice
- 1 tsp Black pepper
- 20ml Pomegranate molasses
- 50ml Water
Cooking Method
- The Scorch Fry beef and onion until dark and charred; remove fat.
- The Architect Add sultanas; fry for 1 minute until they swell.
- The Bloom Add spices with a 30ml splash of water; the steam will release the warming perfume into the meat.
- The Marriage Stir in pomegranate molasses; simmer until it reduces to a thick fruit-meat silk.
- The Final Flourish Use as a filling for raw phyllo; top with raw black sesame seeds.
