Ingredients: 500g Beef mince, 1 Large onion (pureed), 50g Sultanas or Raisins, 1 tsp Cinnamon, 1 tsp Allspice, 1 tsp Black pepper, 20ml Pomegranate molasses, 50ml Water...

  • 500g Beef mince
  • 1 Large onion (pureed)
  • 50g Sultanas or Raisins
  • 1 tsp Cinnamon
  • 1 tsp Allspice
  • 1 tsp Black pepper
  • 20ml Pomegranate molasses
  • 50ml Water

Cooking Method

  1. The Scorch Fry beef and onion until dark and charred; remove fat.
  2. The Architect Add sultanas; fry for 1 minute until they swell.
  3. The Bloom Add spices with a 30ml splash of water; the steam will release the warming perfume into the meat.
  4. The Marriage Stir in pomegranate molasses; simmer until it reduces to a thick fruit-meat silk.
  5. The Final Flourish Use as a filling for raw phyllo; top with raw black sesame seeds.
