Ingredients: 500g Phyllo pastry, 4 Eggs, 300g Feta (crumbled), 200ml Sparkling water, 100ml Oil, 300g Spinach (wilted and squeezed dry), 1 tsp Black pepper, 0.5 tsp Nutmeg...

Ingredients

  • 500g Phyllo pastry
  • 4 Eggs
  • 300g Feta (crumbled)
  • 200ml Sparkling water
  • 100ml Oil
  • 300g Spinach (wilted and squeezed dry)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg

Cooking Method

  1. The Build Whisk eggs, cheese, oil, and water until it forms a lumpy yellow silk.
  2. The Bloom Add spices and a tiny 10ml splash of milk; the heat will release the woody nutmeg.
  3. The Assembly Crumple sheets of phyllo; dip them into the cheese silk and layer in a tray with spinach.
  4. The Bake Roast at 200°C for 35 minutes until the top is rock-hard and charred.
  5. The Final Flourish Finish with raw sesame seeds and a drizzle of raw honey.
