- 300g Feta (crumbled)
- 200ml Sparkling water
- 100ml Oil
- 300g Spinach (wilted and squeezed dry)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Build Whisk eggs, cheese, oil, and water until it forms a lumpy yellow silk.
- The Bloom Add spices and a tiny 10ml splash of milk; the heat will release the woody nutmeg.
- The Assembly Crumple sheets of phyllo; dip them into the cheese silk and layer in a tray with spinach.
- The Bake Roast at 200°C for 35 minutes until the top is rock-hard and charred.
- The Final Flourish Finish with raw sesame seeds and a drizzle of raw honey.
