THE SPICED NUTTY SWIRL

- 500g Chicken thighs (3cm chunks)
- 50g Cashew nuts (toasted & ground)
- 100ml Greek yogurt
- 1 tsp Cardamom powder
- 1 tsp Turmeric
- 1 tsp Cinnamon
- 1 Onion (pureed)
- 2 tbsp Ghee
Cooking Method
- The Architect Fry onion puree in ghee until the water evaporates and it turns a sweet golden brown.
- The Bloom Add dry spices and a splash of water to turn them into a fragrant, bubbling paste.
- The Sear Add chicken; sear on high heat for 5 minutes until the meat is browned.
- The Marriage Stir in the ground cashews and yogurt; simmer on low for 10 minutes until the sauce grips the meat.
- The Final Flourish Top with toasted whole cashews and fresh coriander.
