Ingredients: 500g Chicken thighs (3cm chunks), 50g Cashew nuts (toasted & ground), 100ml Greek yogurt, 1 tsp Cardamom powder, 1 tsp Turmeric, 1 tsp Cinnamon, 1 Onion (pureed), 2 tbsp Ghee...

Ingredients

  • 500g Chicken thighs (3cm chunks)
  • 50g Cashew nuts (toasted & ground)
  • 100ml Greek yogurt
  • 1 tsp Cardamom powder
  • 1 tsp Turmeric
  • 1 tsp Cinnamon
  • 1 Onion (pureed)
  • 2 tbsp Ghee

Cooking Method

  1. The Architect Fry onion puree in ghee until the water evaporates and it turns a sweet golden brown.
  2. The Bloom Add dry spices and a splash of water to turn them into a fragrant, bubbling paste.
  3. The Sear Add chicken; sear on high heat for 5 minutes until the meat is browned.
  4. The Marriage Stir in the ground cashews and yogurt; simmer on low for 10 minutes until the sauce grips the meat.
  5. The Final Flourish Top with toasted whole cashews and fresh coriander.
