THE SPICED MORNING CIRCLE
(Our Play on Masala Dosa Filling)
Ingredients: 500g Potatoes (boiled and mashed), 2 Large onions (finely diced), 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili powder, 2 tbsp Oil, 1 tsp Mustard seeds, 1 tsp Chana Dal (split chickpeas)...
Ingredients
- 500g Potatoes (boiled and mashed)
- 2 Large onions (finely diced)
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Chili powder
- 2 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Chana Dal (split chickpeas)
Cooking Method
- The Temper Heat oil and sizzle the mustard seeds and chana dal until golden brown.
- The Architect Add the onions and cook until they are soft and golden.
- The Bloom Add the spices and a splash of water to form a yellow, aromatic paste.
- The Marriage Toss in the mashed potatoes; stir-fry until the potatoes are bright yellow and fully combined.
- The Finish Garnish with a handful of fresh coriander and a squeeze of lime.
