(Our Play on Boozy Grilled Prawns)

- 400g King prawns
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Salt
- 50ml Mezcal or Tequila
- 2 tbsp Butter
- 1 Lime (juiced)
- 4 cloves Garlic (minced)
Cooking Method
- The Scorch Sear prawns and garlic in 1 tbsp oil for 2 minutes until pink and charred.
- The Bloom Add the alcohol and spices; carefully ignite or boil for 1 minute until the raw spirit evaporates.
- The Marriage Add butter and lime juice; toss for 30 seconds until it forms a thick golden silk.
- The Final Flourish Top with raw fresh coriander and a dusting of sea salt.
