Ingredients: 600g Cooked Duck meat (shredded), 200g Duck fat (melted), 2 cloves Garlic (minced), 1 tsp Black pepper, 0.5 tsp Allspice, 1 tsp Salt, 1 tbsp Armagnac or Brandy...

Ingredients

  • 600g Cooked Duck meat (shredded)
  • 200g Duck fat (melted)
  • 2 cloves Garlic (minced)
  • 1 tsp Black pepper
  • 0.5 tsp Allspice
  • 1 tsp Salt
  • 1 tbsp Armagnac or Brandy

Cooking Method

  1. The Bloom Whisk spices and Armagnac into the hot duck fat with a tiny 10ml splash of water; the heat will release the woody perfume.
  2. The Silk Merge Fold the shredded duck and garlic into the spiced fat until every strand is coated.
  3. The Marriage Beat the mixture with a fork until it becomes a tacky, fibrous silk.
  4. The Chill Pour into a jar and refrigerate until firm.
  5. The Final Flourish Top with a thin layer of raw melted fat and fresh raw thyme.
