THE SPICED MEAT-SILK
(Our Play on Duck Rillettes)
Ingredients: 600g Cooked Duck meat (shredded), 200g Duck fat (melted), 2 cloves Garlic (minced), 1 tsp Black pepper, 0.5 tsp Allspice, 1 tsp Salt, 1 tbsp Armagnac or Brandy...
Ingredients
- 600g Cooked Duck meat (shredded)
- 200g Duck fat (melted)
- 2 cloves Garlic (minced)
- 1 tsp Black pepper
- 0.5 tsp Allspice
- 1 tsp Salt
- 1 tbsp Armagnac or Brandy
Cooking Method
- The Bloom Whisk spices and Armagnac into the hot duck fat with a tiny 10ml splash of water; the heat will release the woody perfume.
- The Silk Merge Fold the shredded duck and garlic into the spiced fat until every strand is coated.
- The Marriage Beat the mixture with a fork until it becomes a tacky, fibrous silk.
- The Chill Pour into a jar and refrigerate until firm.
- The Final Flourish Top with a thin layer of raw melted fat and fresh raw thyme.
