Ingredients: 500g Lamb mince (20% fat), 2 Red onions (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, 1 tsp Chili powder, 200g Tomato passata, 50ml Double cream...

Ingredients

  • 500g Lamb mince (20% fat)
  • 2 Red onions (finely diced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Garam masala
  • 1 tsp Chili powder
  • 200g Tomato passata
  • 50ml Double cream

Cooking Method

  1. The Manual Knead Knead the meat with half the spices for 5 minutes until tacky; shape into 12 even spheres.
  2. The Scorch Sear the spheres in a hot pan until charred and firm; remove and set aside.
  3. The Architect Sauté onions in the same pan until deep golden brown.
  4. The Bloom Add remaining spices and a splash of water to form a thick masala base.
  5. The Simmer Add passata and spheres; simmer for 10 minutes then stir in the cream on low heat.
  6. The Final Flourish Garnish with a handful of fresh coriander right before serving.
