THE SPICED MEAT-ORBS
(Our Play on Lamb Kofta Curry)

- 500g Lamb mince (20% fat)
- 2 Red onions (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Chili powder
- 200g Tomato passata
- 50ml Double cream
Cooking Method
- The Manual Knead Knead the meat with half the spices for 5 minutes until tacky; shape into 12 even spheres.
- The Scorch Sear the spheres in a hot pan until charred and firm; remove and set aside.
- The Architect Sauté onions in the same pan until deep golden brown.
- The Bloom Add remaining spices and a splash of water to form a thick masala base.
- The Simmer Add passata and spheres; simmer for 10 minutes then stir in the cream on low heat.
- The Final Flourish Garnish with a handful of fresh coriander right before serving.
