THE SPICED GRAM LATTICE

Ingredients: 150g Gram flour, 1 tbsp Rice flour, 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili flakes, 150ml Cold water, 0.5 tsp Salt, 1 small red onion (finely diced), Fresh coriander (chopped)...

Ingredients

  • 150g Gram flour
  • 1 tbsp Rice flour
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Chili flakes
  • 150ml Cold water
  • 0.5 tsp Salt
  • 1 small red onion (finely diced)
  • Fresh coriander (chopped)

Cooking Method

  1. The Mix Whisk flour, water, and spices into a smooth batter; stir in the red onion and coriander.
  2. The Scorch Heat 1 tsp oil in a non-stick pan; pour a ladle of batter and swirl into a thin lattice.
  3. The Crisp Cook for 2 minutes until the edges are golden and crispy; flip and cook for 1 minute.
  4. The Final Flourish Serve immediately with a hit of raw mint chutney.
