THE SPICED GRAM LATTICE
(Our Play on Besan Chilla)
Ingredients: 150g Gram flour, 1 tbsp Rice flour, 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Chili flakes, 150ml Cold water, 0.5 tsp Salt, 1 small red onion (finely diced), Fresh coriander (chopped)...

- 150g Gram flour
- 1 tbsp Rice flour
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Chili flakes
- 150ml Cold water
- 0.5 tsp Salt
- 1 small red onion (finely diced)
- Fresh coriander (chopped)
Cooking Method
- The Mix Whisk flour, water, and spices into a smooth batter; stir in the red onion and coriander.
- The Scorch Heat 1 tsp oil in a non-stick pan; pour a ladle of batter and swirl into a thin lattice.
- The Crisp Cook for 2 minutes until the edges are golden and crispy; flip and cook for 1 minute.
- The Final Flourish Serve immediately with a hit of raw mint chutney.
