THE SPICED GRAM-FUSION
(Our Play on Gatte ki Sabzi / Gram Flour Dumplings)
Ingredients: 150g Gram flour, 0.5 tsp Turmeric, 1 tbsp Yogurt, Water to bind, 200g Greek yogurt, 1 tbsp Tomato purée, 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Garam masala, 1 Large onion (finely diced)...
Ingredients
- 150g Gram flour
- 0.5 tsp Turmeric
- 1 tbsp Yogurt
- Water to bind
- 200g Greek yogurt
- 1 tbsp Tomato purée
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Garam masala
- 1 Large onion (finely diced)
- 1 tbsp Ginger-garlic paste
Cooking Method
- The Build Knead the dumpling ingredients into a stiff dough; roll into sausages and boil in water for 10 minutes until they float; slice into coins.
- The Architect Sauté onions in 2 tbsp oil until they are a deep, sweet golden brown.
- The Bloom Add spices and a 30ml splash of water to turn them into a fragrant, bubbling paste.
- The Marriage Whisk yogurt and tomato purée; stir into the pan on low heat. Add the gram flour coins and simmer for 5 minutes.
- The Final Flourish Garnish with a handful of fresh coriander and dried fenugreek leaves.
