Ingredients

  • 200g Gram flour
  • 2 tbsp Rice flour
  • 1 tsp Turmeric
  • 1 tsp Cumin seeds
  • 1 tsp Chili flakes
  • 1 Large red onion (finely diced)
  • Fresh coriander

Cooking Method

  1. The Mix Whisk flour and spices with enough water to form a thick, pancake-like batter.
  2. The Bloom Stir in the diced onions and coriander; let rest for 5 minutes.
  3. The Scorch Pour a ladle into a hot, oiled pan; flatten and fry until the edges are crispy.
  4. The Char Flip and cook for 2 minutes until charred brown spots appear.
  5. The Final Flourish Serve immediately with a hit of raw coconut chutney.
