- 200g Gram flour
- 2 tbsp Rice flour
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Chili flakes
- 1 Large red onion (finely diced)
- Fresh coriander
Cooking Method
- The Mix Whisk flour and spices with enough water to form a thick, pancake-like batter.
- The Bloom Stir in the diced onions and coriander; let rest for 5 minutes.
- The Scorch Pour a ladle into a hot, oiled pan; flatten and fry until the edges are crispy.
- The Char Flip and cook for 2 minutes until charred brown spots appear.
- The Final Flourish Serve immediately with a hit of raw coconut chutney.
