Cooking Method
- The Bloom Stir cinnamon into the boiling hot espresso; the heat will swell the woodiness into the dark mist.
- The Whisk Beat yolks and sugar until pale; fold in mascarpone and the spiced espresso.
- The Assembly Layer soaked ladyfingers with the espresso silk in a dish.
- The Final Flourish Dust heavily with raw cocoa and fresh orange zest before chilling.
