- 100g Dark chocolate (melted)
- 3 Eggs (separated)
- 50g Sugar
- 1 tsp Cinnamon
- 0.5 tsp Chili powder
- 1 tsp Vanilla extract
- Icing sugar
- Orange zest
Cooking Method
- The Bloom Whisk cinnamon and chili into the melted chocolate with a tiny 10ml splash of warm milk to release the aromatics.
- The Silk Merge Stir egg yolks and vanilla into the spiced chocolate silk.
- The Swell Whisk egg whites and sugar until stiff peaks form; fold gently into the chocolate.
- The Bake Pour into ramekins; roast at 190°C for 15 minutes until the cloud rises and the top is charred.
- The Final Flourish Dust with raw icing sugar and top with fresh orange zest.
