THE SPICED CAULIFLOWER CLOUD

Ingredients: 1 Medium cauliflower (tiny florets), 2 tbsp Cornflour, 1 tbsp Rice flour, 1 tbsp Gram flour, 1 tsp Turmeric, 2 tsp Kashmiri chili powder, 1 tsp Ginger-garlic paste, 10 Curry leaves, 2 Green chilies (slit)...

Ingredients

  • 1 Medium cauliflower (tiny florets)
  • 2 tbsp Cornflour
  • 1 tbsp Rice flour
  • 1 tbsp Gram flour
  • 1 tsp Turmeric
  • 2 tsp Kashmiri chili powder
  • 1 tsp Ginger-garlic paste
  • 10 Curry leaves
  • 2 Green chilies (slit)

Cooking Method

  1. The Coat Toss cauliflower in flours and spices; add a 20ml splash of water so the spices form a sticky red slurry.
  2. The Fry Deep fry in 180°C oil for 4 minutes until dark red and crunchy.
  3. The Scorch In a fresh pan, sizzle curry leaves and chilies; toss the fried cauliflower through for 1 minute.
  4. The Final Flourish Dust with Chaat Masala and serve immediately.
