THE SPICED CAULIFLOWER CLOUD
(Our Play on Gobi 65)
Ingredients: 1 Medium cauliflower (tiny florets), 2 tbsp Cornflour, 1 tbsp Rice flour, 1 tbsp Gram flour, 1 tsp Turmeric, 2 tsp Kashmiri chili powder, 1 tsp Ginger-garlic paste, 10 Curry leaves, 2 Green chilies (slit)...
Ingredients
- 1 Medium cauliflower (tiny florets)
- 2 tbsp Cornflour
- 1 tbsp Rice flour
- 1 tbsp Gram flour
- 1 tsp Turmeric
- 2 tsp Kashmiri chili powder
- 1 tsp Ginger-garlic paste
- 10 Curry leaves
- 2 Green chilies (slit)
Cooking Method
- The Coat Toss cauliflower in flours and spices; add a 20ml splash of water so the spices form a sticky red slurry.
- The Fry Deep fry in 180°C oil for 4 minutes until dark red and crunchy.
- The Scorch In a fresh pan, sizzle curry leaves and chilies; toss the fried cauliflower through for 1 minute.
- The Final Flourish Dust with Chaat Masala and serve immediately.
