- 200g Pork or Chicken strips
- 2 Eggs
- 2 tbsp Dark soy sauce
- 1 tbsp Oyster sauce
- 1 tsp Sugar
- 100g Chinese broccoli (Gai Lan) or Spinach
Cooking Method
- The Scorch High-heat stir-fry meat until browned; push aside and scramble the eggs in the pan.
- The Marriage Add the noodles and veg; toss on maximum heat to get 'wok hei' (charred flavor).
- The Bloom Add the sauces with a tiny 15ml splash of water to help the soy coat the wide strands evenly.
- The Finish Toss for 2 minutes until the noodles are dark, sticky, and slightly charred at the edges.
