THE SOY-LACQUER PASTIČADA
(Our Play on Croatian Beef with an Asian Twist)
Ingredients: 1kg Beef brisket, 2 Red onions (pureed), 6 Prunes (halved), 4 cloves Garlic, 1 tsp Black pepper, 3 Cloves, 1 tsp Nutmeg, 100ml Soy sauce, 200ml Red wine, 1 tbsp Honey...

- 2 Red onions (pureed)
- 6 Prunes (halved)
- 4 cloves Garlic
- 1 tsp Black pepper
- 3 Cloves
- 1 tsp Nutmeg
- 100ml Soy sauce
- 200ml Red wine
- 1 tbsp Honey
Cooking Method
- The Scorch Sear beef on maximum heat until a dark, charred mahogany crust forms; remove.
- The Architect Fry onion puree in the fat until it turns into a dark sweet jam.
- The Bloom Add spices and prunes with a 40ml splash of wine; the steam will release the woody perfume.
- The Swell Add soy sauce, honey, and remaining wine; return beef. Simmer covered for 100 minutes until melting.
- The Marriage The liquid should reduce to a black, glossy umami silk.
- The Final Flourish Slice and serve with raw fresh chives and extra soy-glaze.
