THE SOY-GARLIC CHICKEN-CLUSTERS
(Our Play on Korean Garlic Fried Chicken)

- 500g Chicken thighs (cubed)
- 4 tbsp Cornflour
- 1 Egg
- 4 tbsp Soy sauce
- 2 tbsp Honey
- 1 tbsp Ginger paste
- 6 cloves Garlic (minced)
- Sliced Red chilies
- Spring onions
Cooking Method
- The Coat Dredge chicken in egg then cornflour; fry until golden and crispy; remove.
- The Architect In a fresh pan, fry the minced garlic in 1 tbsp oil until it is deep golden and smells like a biscuit.
- The Bloom Add the remaining silk ingredients and a 40ml splash of water; boil until it form a dark, thick lava.
- The Marriage Toss the crispy chicken into the garlic lava until every piece is mahogany and sticky.
- The Finish Top with fresh chilies and spring onions for a sharp aromatic hit.
