- 200g Fresh Chorizo (crumbled)
- 400g Potatoes (boiled and cubed)
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 small onion (minced)
Cooking Method
- The Scorch Fry chorizo until the fat renders and it turns rock-hard crispy; add onions.
- The Bloom Add spices with a tiny 15ml splash of water; the steam will help the red fat coat the pan.
- The Marriage Toss the potatoes in the red fat; fry on high heat for 5 minutes until the spuds are stained crimson and crispy.
- The Final Flourish Finish with a massive hit of raw fresh coriander and lime.
