THE SMOKY SPUD-CRUMBLE

Ingredients: 200g Fresh Chorizo (crumbled), 400g Potatoes (boiled and cubed), 1 tsp Smoked paprika, 1 tsp Cumin, 1 small onion (minced)...

Ingredients

  • 200g Fresh Chorizo (crumbled)
  • 400g Potatoes (boiled and cubed)
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 1 small onion (minced)

Cooking Method

  1. The Scorch Fry chorizo until the fat renders and it turns rock-hard crispy; add onions.
  2. The Bloom Add spices with a tiny 15ml splash of water; the steam will help the red fat coat the pan.
  3. The Marriage Toss the potatoes in the red fat; fry on high heat for 5 minutes until the spuds are stained crimson and crispy.
  4. The Final Flourish Finish with a massive hit of raw fresh coriander and lime.
