THE SMOKY SAUSAGE PULSE
(Our Play on Bulgarian Lentils with Chorizo Influence)
Ingredients: 300g Green Lentils, 200g Smoked Chorizo or Chouriço (sliced), 1 Red onion (diced), 2 cloves Garlic, 1 Carrot (minced), 1 tbsp Smoked paprika, 1 tsp Dried Thyme, 2 Bay leaves, 1 tbsp Vinegar, 1 tbsp Honey...
Ingredients
- 300g Green Lentils
- 200g Smoked Chorizo or Chouriço (sliced)
- 1 Red onion (diced)
- 2 cloves Garlic
- 1 Carrot (minced)
- 1 tbsp Smoked paprika
- 1 tsp Dried Thyme
- 2 Bay leaves
- 1 tbsp Vinegar
- 1 tbsp Honey
Cooking Method
- The Scorch Fry sausage until the fat renders and edges are charred; remove.
- The Architect Sauté onion, carrot, and garlic in the red fat until soft.
- The Bloom Add spices and bay leaves with a 30ml splash of stock; the steam will release the woody perfume.
- The Swell Add lentils and 700ml stock; simmer for 20 minutes until tender.
- The Marriage Stir in honey and vinegar; return sausage. Simmer until it form a thick, smoky red silk.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
