THE SMOKY REEF-TACO
(Our Play on Spiced Fish Tacos)
Ingredients: 400g Firm white fish (Cod or Tilapia strips), 1 tsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Dried Oregano, 2 tbsp Oil, 1 Lime (juiced), 100ml Sour cream, 1 tsp Hot sauce...
Ingredients
- 400g Firm white fish (Cod or Tilapia strips)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Dried Oregano
- 2 tbsp Oil
- 1 Lime (juiced)
- 100ml Sour cream
- 1 tsp Hot sauce
Cooking Method
- The Coat Rub fish with spices; add a 10ml splash of water to the spices to form a sticky paste that grips the fish.
- The Scorch Fry fish in oil on high heat for 3 minutes per side until charred and flaky.
- The Marriage Whisk sour cream and hot sauce with a tiny splash of lime juice to create the topping silk.
- The Assembly Place fish in charred tortillas; top with the spicy silk.
- The Final Flourish Top with shredded raw cabbage and a hit of fresh coriander.
