Ingredients: 400g Firm white fish (Cod or Tilapia strips), 1 tsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Dried Oregano, 2 tbsp Oil, 1 Lime (juiced), 100ml Sour cream, 1 tsp Hot sauce...

Ingredients

  • 400g Firm white fish (Cod or Tilapia strips)
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Dried Oregano
  • 2 tbsp Oil
  • 1 Lime (juiced)
  • 100ml Sour cream
  • 1 tsp Hot sauce

Cooking Method

  1. The Coat Rub fish with spices; add a 10ml splash of water to the spices to form a sticky paste that grips the fish.
  2. The Scorch Fry fish in oil on high heat for 3 minutes per side until charred and flaky.
  3. The Marriage Whisk sour cream and hot sauce with a tiny splash of lime juice to create the topping silk.
  4. The Assembly Place fish in charred tortillas; top with the spicy silk.
  5. The Final Flourish Top with shredded raw cabbage and a hit of fresh coriander.
