THE SMOKY REEF-STRIPS

- 400g Cooked Octopus (sliced into strips)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 0.5 tsp Cumin
- 2 tbsp Olive oil
- 1 Lime (juiced)
- 1 Red onion (petals)
Cooking Method
- The Scorch Fry octopus and onion in oil on maximum heat for 3 minutes until charred and crispy.
- The Bloom Add spices and a tiny 15ml splash of lime juice; the steam will create a smoky red lacquer on the reef.
- The Marriage Toss for 1 minute until the liquid evaporates and the meat is stained red.
- The Final Flourish Serve in warm tortillas with raw fresh coriander and lime.
