Ingredients: 1kg Fresh Mussels, 6 cloves Garlic (minced), 50g Breadcrumbs, 100ml Extra virgin olive oil, 1 tsp Smoked paprika, 1 tsp White pepper, 200ml Dry White Wine, Handful of fresh Parsley...

Ingredients

  • 1kg Fresh Mussels
  • 6 cloves Garlic (minced)
  • 50g Breadcrumbs
  • 100ml Extra virgin olive oil
  • 1 tsp Smoked paprika
  • 1 tsp White pepper
  • 200ml Dry White Wine
  • Handful of fresh Parsley

Cooking Method

  1. The Architect Heat oil and garlic until it starts to turn a pale biscuit gold; add breadcrumbs and fry until charred.
  2. The Bloom Add paprika and pepper with a 30ml splash of wine; the sudden hiss will release the smoky oils into the crumbs.
  3. The Swell Add remaining wine; bring to a rolling boil. Add mussels.
  4. The Marriage Cover tightly for 5 minutes until all shells open. The breadcrumbs will thicken the marine nectar into a grey-red silk.
  5. The Final Flourish Finish with a massive hit of raw fresh parsley and lemon juice.
