(Our Play on Croatian Buzara / Mussels)
Ingredients: 1kg Fresh Mussels, 6 cloves Garlic (minced), 50g Breadcrumbs, 100ml Extra virgin olive oil, 1 tsp Smoked paprika, 1 tsp White pepper, 200ml Dry White Wine, Handful of fresh Parsley...

- 1kg Fresh Mussels
- 6 cloves Garlic (minced)
- 50g Breadcrumbs
- 100ml Extra virgin olive oil
- 1 tsp Smoked paprika
- 1 tsp White pepper
- 200ml Dry White Wine
- Handful of fresh Parsley
Cooking Method
- The Architect Heat oil and garlic until it starts to turn a pale biscuit gold; add breadcrumbs and fry until charred.
- The Bloom Add paprika and pepper with a 30ml splash of wine; the sudden hiss will release the smoky oils into the crumbs.
- The Swell Add remaining wine; bring to a rolling boil. Add mussels.
- The Marriage Cover tightly for 5 minutes until all shells open. The breadcrumbs will thicken the marine nectar into a grey-red silk.
- The Final Flourish Finish with a massive hit of raw fresh parsley and lemon juice.
