- 500g Pork shoulder (thin strips)
- 2 tbsp Achiote/Chili paste
- 1 tsp Cumin
- 1 tsp Dried Oregano
- 100ml Pineapple juice
- 1 tbsp Vinegar
- 100g Fresh Pineapple (diced)
Cooking Method
- The Coat Whisk juice, vinegar, and spices; marinate pork for 30 minutes to tenderize.
- The Scorch Fry pork and pineapple on maximum heat until the edges are blackened and charred.
- The Bloom Add a tiny 15ml splash of water to the pan halfway through to release the sugars.
- The Marriage Toss until the liquid reduces to a thick red lacquer on the meat.
- The Final Flourish Serve with raw onion, coriander, and fresh lime.
