THE SMOKY RED-PEPPER SILK

Ingredients: 6 Red bell peppers, 2 Eggplants, 4 cloves Garlic, 100ml Sunflower oil, 1 tsp Chili flakes, 1 tsp Salt, 1 tbsp Wine vinegar...

Ingredients

  • 6 Red bell peppers
  • 2 Eggplants
  • 4 cloves Garlic
  • 100ml Sunflower oil
  • 1 tsp Chili flakes
  • 1 tsp Salt
  • 1 tbsp Wine vinegar

Cooking Method

  1. The Scorch Roast whole peppers and eggplants at 220°C until the skins are blackened and blistered; peel and seed.
  2. The Architect Blitz the flesh with garlic into a rough pulp.
  3. The Bloom Fry the pulp in oil on low heat; add spices with a 15ml splash of vinegar to help the chili oils integrate.
  4. The Swell Simmer for 45 minutes, stirring constantly until the oil rises and it forms a thick, smoky silk.
  5. The Final Flourish Jar while hot; serve as a raw hit for meat or bread.
