THE SMOKY RED-PEPPER SILK

Ingredients
- 6 Red bell peppers
- 2 Eggplants
- 4 cloves Garlic
- 100ml Sunflower oil
- 1 tsp Chili flakes
- 1 tsp Salt
- 1 tbsp Wine vinegar
Cooking Method
- The Scorch Roast whole peppers and eggplants at 220°C until the skins are blackened and blistered; peel and seed.
- The Architect Blitz the flesh with garlic into a rough pulp.
- The Bloom Fry the pulp in oil on low heat; add spices with a 15ml splash of vinegar to help the chili oils integrate.
- The Swell Simmer for 45 minutes, stirring constantly until the oil rises and it forms a thick, smoky silk.
- The Final Flourish Jar while hot; serve as a raw hit for meat or bread.
