THE SMOKY PULSE-SWELL
(Our Play on Lentils with Bacon & Thyme)

Ingredients
- 250g Green Lentils (rinsed)
- 100g Bacon lardons
- 1 Onion (diced)
- 1 Carrot (minced)
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 800ml Chicken stock
- 1 tbsp Dijon mustard
Cooking Method
- The Scorch Fry bacon until crispy; add onion and carrot and sauté until soft.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the smoky pork essence.
- The Swell Add lentils and remaining stock; simmer for 20 minutes until tender but firm.
- The Marriage Stir in the mustard until it form a thick silk that coats the pulses.
- The Final Flourish Finish with raw extra virgin olive oil and a hit of fresh lemon.
