- 500g Broad beans (Favas)
- 150g Chouriço (sliced)
- 50g Bacon
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 1 Onion (diced)
- 2 cloves Garlic
- Handful of fresh Mint
Cooking Method
- The Scorch Fry chouriço and bacon until fat renders and skin is charred; remove.
- The Architect Sauté onion and garlic in the red fat until soft.
- The Bloom Add paprika and pepper with a 30ml splash of water; the heat will bloom the smoky aromatics.
- The Marriage Add beans and half the mint; simmer for 15 minutes until tender.
- The Final Flourish Return meat; top with a massive hit of raw fresh mint and a squeeze of lemon.
