Ingredients
- 2 Large Eggplants (roasted and mashed)
- 1 Red onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Garam masala
Cooking Method
- The Char Roast eggplants over an open flame until blackened; peel and mash the smokey flesh.
- The Architect Sauté onions until deep golden; do not rush this foundation.
- The Bloom Add spices and a 30ml splash of water to form a thick, fragrant paste.
- The Marriage Add mashed eggplant; stir-fry for 10 minutes until fully combined.
- The Final Flourish Garnish with a massive handful of fresh coriander.
