Ingredients
- 400g Cooked chicken (shredded)
- 1 Large onion (sliced into petals)
- 2 cloves Garlic
- 2 tbsp Chipotle in Adobo (minced)
- 1 tsp Dried Oregano
- 400g Tomato passata
- 100ml Chicken stock
Cooking Method
- The Scorch Fry onion petals in 1 tbsp oil until blackened at the edges.
- The Bloom Add garlic, chipotle, and oregano with a 30ml splash of stock; fry until the smoky oil separates.
- The Swell Add passata and remaining stock; simmer for 10 minutes until thick.
- The Marriage Toss in the shredded chicken; simmer for 5 minutes until it absorbs the red silk.
- The Final Flourish Top with raw fresh avocado and feta crumbles.
