THE SMOKY PAPRIKA SWELL
(Our Play on Balkan Style Braised Pork Ribs)
Ingredients: 1kg Pork ribs (individual), 2 Red onions (pureed), 2 cloves Garlic, 2 tbsp Flour, 2 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Salt, 500ml Light Beer, 1 tbsp Honey...

- 1kg Pork ribs (individual)
- 2 Red onions (pureed)
- 2 cloves Garlic
- 2 tbsp Flour
- 2 tbsp Smoked paprika
- 1 tsp Black pepper
- 1 tsp Salt
- 500ml Light Beer
- 1 tbsp Honey
Cooking Method
- The Scorch Sear ribs on max heat until blackened and charred; remove.
- The Architect Fry onion puree and garlic in the fat until sweet; stir in flour.
- The Bloom Add paprika and pepper with a 50ml splash of beer; the hiss will release the smoky oils.
- The Swell Add remaining beer and honey; return ribs. Simmer covered for 45 minutes.
- The Final Flourish Top with raw fresh parsley and extra sea salt.
