THE SMOKY DRUNKEN BIRD
(Our Play on Thai Drunken Chicken)

Ingredients
- 500g Chicken thighs (thin strips)
- 2 tbsp Oyster sauce
- 1 tbsp Soy sauce
- 1 tbsp Chili oil
- 1 Onion (petals)
- 3 Red chilies (smashed)
- 4 cloves Garlic
- Massive handful of fresh Basil
Cooking Method
- The Scorch Fry garlic and chilies in oil until they are dark and smell sharp.
- The Sear Add chicken and onions; stir-fry on max heat until charred and browned.
- The Bloom Add the fire silk ingredients and a 30ml splash of water; boil for 2 minutes until it form a dark glaze.
- The Marriage Toss in the basil; stir-fry for 30 seconds until the leaves wilt into the meat.
- The Finish Serve immediately while the basil perfume is intense.
