THE SMOKY CORN-SILK
(Our Play on Romanian Mămăligă with a Paprika Twist)
Ingredients: 200g Cornmeal (Polenta), 800ml Water, 100g Butter, 100g Sour cream, 1 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Salt...
Ingredients
- 200g Cornmeal (Polenta)
- 800ml Water
- 100g Butter
- 100g Sour cream
- 1 tbsp Smoked paprika
- 1 tsp Black pepper
- 1 tsp Salt
Cooking Method
- The Swell Boil water and salt; slowly whisk in cornmeal until thick.
- The Bloom Melt butter in a small pan; add paprika and pepper with a tiny 15ml splash of water; the reaction will bloom the smoke.
- The Silk Merge Whisk the spiced butter and sour cream into the cornmeal until it forms a thick, glowing orange silk.
- The Final Flourish Top with raw crumbled Feta and a drizzle of raw extra virgin olive oil.
