THE SMOKY BOIL-SWELL

- 200g Chouriço
- 200g Pork belly
- 200g Beef brisket
- 4 Potatoes
- 2 Carrots
- 1 Cabbage (quartered)
- 1 tsp Black peppercorns
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1.5L Beef stock
Cooking Method
- The Scorch Fry chouriço and pork belly in a large pot until charred; remove.
- The Bloom Add spices and a 40ml splash of stock to the pot; the hiss will release the smoky pork essence.
- The Swell Add all remaining meat, stock, and vegetables; simmer covered for 30 minutes until potatoes are soft.
- The Marriage The liquid should be a clear, fatty, smoky mist.
- The Final Flourish Serve on a large platter; top with raw extra virgin olive oil and coarse salt.
