THE SMOKY BEEF-STRANDS
(Our Play on Chipotle Beef Tacos)

- 500g Beef sirloin (thin strips)
- 2 tbsp Chipotle paste
- 1 tsp Cumin
- 1 tsp Black pepper
- 1 Large onion (sliced)
- 2 cloves Garlic
- 50ml Beef stock
- 1 tbsp Honey
Cooking Method
- The Scorch Fry beef and onions on maximum heat until the edges are blackened and charred.
- The Bloom Add garlic, chipotle, and cumin with a 25ml splash of stock; the steam will carry the smoke into the meat.
- The Marriage Add honey and remaining stock; toss for 2 minutes until the liquid reduces to a thick red lacquer.
- The Final Flourish Serve in warm tortillas with raw fresh salsa and a hit of lime.
