THE SMOKY BEAN-SILK DIP

Ingredients: 400g Black beans (canned/rinsed), 1 tbsp Chipotle in Adobo, 1 tsp Cumin, 1 tsp Garlic powder, 100g Cream cheese, 50ml Milk, 100g Cheddar (grated), 1 small red onion (minced)...

Ingredients

  • 400g Black beans (canned/rinsed)
  • 1 tbsp Chipotle in Adobo
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 100g Cream cheese
  • 50ml Milk
  • 100g Cheddar (grated)
  • 1 small red onion (minced)

Cooking Method

  1. The Architect Sauté onion in 1 tbsp oil until soft.
  2. The Bloom Add chipotle and spices with a tiny 15ml splash of water; the heat will swell the smoky oils.
  3. The Marriage Add beans, cream cheese, milk, and cheddar; whisk on medium heat until a thick molten silk forms.
  4. The Mash Coarsely mash half the beans into the silk to maintain some architecture.
  5. The Final Flourish Top with raw diced tomatoes, jalapeños, and fresh coriander.
