(Our Play on Baingan Bharta)

Cooking Method
- The Char Roast eggplants over a high flame or grill until blackened; peel and mash the smokey flesh.
- The Architect Sauté onions until deep golden; don't rush this foundation.
- The Bloom Add the spices and a splash of water to create a fragrant paste.
- The Simmer Add the mashed eggplant and chopped tomatoes; stir-fry until the oil separates.
- The Finish Garnish with a massive handful of fresh coriander.
