THE SIRENE RED CRUSH
(Our Play on Bulgarian Shopska Salad)
Ingredients: 3 Tomatoes, 1 Cucumber, 1 Red onion, 2 Green peppers, 1 tsp Black pepper, 1 tsp Salt, 2 tbsp Sunflower oil, 1 tbsp Wine vinegar, 200g Sirene or Feta (finely grated)...
Ingredients
- 3 Tomatoes
- 1 Cucumber
- 1 Red onion
- 2 Green peppers
- 1 tsp Black pepper
- 1 tsp Salt
- 2 tbsp Sunflower oil
- 1 tbsp Wine vinegar
- 200g Sirene or Feta (finely grated)
Cooking Method
- The Scorch Roast the green peppers until the skins are charred; peel and dice.
- The Architect Dice the remaining raw veg and combine in a bowl.
- The Bloom Whisk vinegar, oil, and spices with a tiny 5ml splash of warm water to help the pepper oils release.
- The Marriage Toss the veg in the spiced silk; cover the top with a mountain of grated cheese.
- The Final Flourish Top with a single black olive and fresh raw parsley matchsticks.
