THE SIRENE RED CRUSH

Ingredients: 3 Tomatoes, 1 Cucumber, 1 Red onion, 2 Green peppers, 1 tsp Black pepper, 1 tsp Salt, 2 tbsp Sunflower oil, 1 tbsp Wine vinegar, 200g Sirene or Feta (finely grated)...

  • 3 Tomatoes
  • 1 Cucumber
  • 1 Red onion
  • 2 Green peppers
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 2 tbsp Sunflower oil
  • 1 tbsp Wine vinegar
  • 200g Sirene or Feta (finely grated)

Cooking Method

  1. The Scorch Roast the green peppers until the skins are charred; peel and dice.
  2. The Architect Dice the remaining raw veg and combine in a bowl.
  3. The Bloom Whisk vinegar, oil, and spices with a tiny 5ml splash of warm water to help the pepper oils release.
  4. The Marriage Toss the veg in the spiced silk; cover the top with a mountain of grated cheese.
  5. The Final Flourish Top with a single black olive and fresh raw parsley matchsticks.
