THE SILKY MANGO PUDDING

Ingredients
- 50g Rice (soaked and ground to a coarse paste)
- 700ml Full-fat milk
- 100g Mango pulp
- 50g Sugar
- 1 tsp Cardamom powder
- Saffron strands
Cooking Method
- The Reduction Boil milk and add the rice paste; simmer on low heat, stirring constantly, until thick.
- The Sweeten Add sugar and cardamom; cook for 5 minutes until the sugar dissolves.
- The Swell Remove from heat and stir in the mango pulp until the pudding turns a bright, silky orange.
- The Chill Pour into small clay bowls or ramekins and refrigerate for 2 hours.
- The Final Flourish Top with a sprinkle of crushed pistachios and saffron strands.
