THE SILKY BREAD-SOAK
(Our Play on Shahi Tukda / Royal Bread Pudding)
Ingredients: 4 Slices of white bread (crusts removed, halved into triangles), 500ml Full-fat milk, 50g Sugar, 20g Ghee, 1 tsp Cardamom powder, Saffron strands, 20g Pistachios, 20g Almonds (slivered)...
Ingredients
- 4 Slices of white bread (crusts removed, halved into triangles)
- 500ml Full-fat milk
- 50g Sugar
- 20g Ghee
- 1 tsp Cardamom powder
- Saffron strands
- 20g Pistachios
- 20g Almonds (slivered)
Cooking Method
- The Scorch Fry bread triangles in ghee on high heat until dark golden and crispy on both sides.
- The Reduction Boil milk in a heavy pan until it reduces by half and becomes a thick, creamy silk.
- The Sweeten Stir in sugar and cardamom; cook until the sugar dissolves.
- The Soak Dip the fried bread into the hot milk silk; let soak for 2 minutes.
- The Final Flourish Top with a massive hit of saffron and crushed nuts.
