THE SILK-PULSE TANGLE
(Our Play on Spanish Bean & Pasta Soup)

Ingredients
- 400g Cannellini beans (canned)
- 100g Chorizo (diced)
- 1 small onion (pureed)
- 100g Small pasta
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 2 tbsp Tomato purée
- 1L Veg stock
Cooking Method
- The Scorch Fry chorizo until crispy; add onion puree and fry until sweet and golden.
- The Bloom Add tomato purée and spices with a 30ml splash of stock to release the smoky perfume.
- The Swell Add remaining stock, beans, and pasta; simmer for 10 minutes until pasta is soft.
- The Marriage Crush half the beans against the pot to release the starch and turn the soup into a thick silk.
- The Final Flourish Top with raw extra virgin olive oil and fresh black pepper.
