Ingredients: 400g Cannellini beans (canned), 100g Chorizo (diced), 1 small onion (pureed), 100g Small pasta, 1 tsp Smoked paprika, 1 tsp Black pepper, 2 tbsp Tomato purée, 1L Veg stock...

Ingredients

  • 400g Cannellini beans (canned)
  • 100g Chorizo (diced)
  • 1 small onion (pureed)
  • 100g Small pasta
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 2 tbsp Tomato purée
  • 1L Veg stock

Cooking Method

  1. The Scorch Fry chorizo until crispy; add onion puree and fry until sweet and golden.
  2. The Bloom Add tomato purée and spices with a 30ml splash of stock to release the smoky perfume.
  3. The Swell Add remaining stock, beans, and pasta; simmer for 10 minutes until pasta is soft.
  4. The Marriage Crush half the beans against the pot to release the starch and turn the soup into a thick silk.
  5. The Final Flourish Top with raw extra virgin olive oil and fresh black pepper.
