THE SILK FIRE-BEEF
(Our Play on Mapo Tofu with Beef)
Ingredients: 400g Soft Tofu (cubed), 100g Beef mince, 2 tbsp Chili bean paste (Doubanjiang), 1 tsp Szechuan peppercorns, 1 Red onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tbsp Soy sauce, 1 tsp Sugar, 1 tbsp Cornflour (mixed with 50ml stock)...
Ingredients
- 400g Soft Tofu (cubed)
- 100g Beef mince
- 2 tbsp Chili bean paste (Doubanjiang)
- 1 tsp Szechuan peppercorns
- 1 Red onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tbsp Soy sauce
- 1 tsp Sugar
- 1 tbsp Cornflour (mixed with 50ml stock)
Cooking Method
- The Scorch Fry beef mince and peppercorns until browned and crispy.
- The Architect Add onions and ginger-garlic; sauté until the architect provides a sweet foundation.
- The Bloom Add chili paste with a 30ml splash of water; fry until the red oil separates.
- The Marriage Gently slide in the tofu and cornflour silk; simmer for 4 minutes until thickened into a red lacquer.
- The Finish Top with a massive hit of raw spring onions.
