THE SILK-CLOAKED MINCE-MIST

Ingredients: 12 Pork Wontons (store-bought or homemade), 800ml Chicken stock, 1 tbsp Soy sauce, 20g Fresh ginger (sliced), 2 cloves Garlic (crushed), Sesame oil, Fresh spring onions...

Ingredients

  • 12 Pork Wontons (store-bought or homemade)
  • 800ml Chicken stock
  • 1 tbsp Soy sauce
  • 20g Fresh ginger (sliced)
  • 2 cloves Garlic (crushed)
  • Sesame oil
  • Fresh spring onions

Cooking Method

  1. The Scorch Dry-toast the ginger and garlic in the pot for 1 minute until fragrant.
  2. The Bloom Add a tiny 20ml splash of water to 'hiss' the pot before adding the stock and soy.
  3. The Swell Bring stock to a boil; simmer for 5 minutes then remove the ginger and garlic.
  4. The Marriage Add wontons; simmer for 4 minutes until they float and the skins are silky.
  5. The Finish Finish with a heavy drizzle of sesame oil and fresh spring onions.
