THE SIGNATURE WHITE-WINE MIST
(Our Play on the Ultimate Balkan Fish Chowder)
Ingredients: 600g Mixed Fish (Snapper, Bass, Salmon), 2 Red onions (pureed), 2 Carrots (minced), 2 cloves Garlic, 1 tsp Black pepper, 1 tsp Salt, 1 tsp Dried Parsley, 1L Fish stock, 200ml Dry White Wine, 1 tbsp Vinegar...
Ingredients
- 600g Mixed Fish (Snapper, Bass, Salmon)
- 2 Red onions (pureed)
- 2 Carrots (minced)
- 2 cloves Garlic
- 1 tsp Black pepper
- 1 tsp Salt
- 1 tsp Dried Parsley
- 1L Fish stock
- 200ml Dry White Wine
- 1 tbsp Vinegar
Cooking Method
- The Architect Fry onion and carrot puree in 4 tbsp oil until the moisture vanishes.
- The Bloom Add garlic and spices with a 40ml splash of wine; the steam will release the aromatics.
- The Swell Add remaining wine and stock; simmer for 15 minutes.
- The Marriage Gently add fish chunks; simmer for 6 minutes until tender. Stir in vinegar at the last second.
- The Final Flourish Serve the chunks in the clear mist; top with raw extra virgin olive oil and a mountain of raw fresh parsley.
