Cooking Method
- The Swell Heat milk with the vanilla pod; simmer for 5 minutes—do not boil.
- The Bloom Whisk yolks, sugar, and cornflour with the white pepper and a tiny 10ml splash of warm milk; the heat will swell the aromatic woodiness.
- The Silk Merge Slowly whisk the hot milk into the egg mixture; return to heat and whisk until it forms a thick, heavy cloud.
- The Marriage Whisk in cold butter off the heat for a glossy finish.
- The Final Flourish Top with raw fresh raspberries and a final pinch of raw white pepper.
