THE SIGNATURE TAMARIND BIRD
(Our Play on South Indian Chicken Curry)

- 800g Chicken (bone-in chunks)
- 2 tbsp Tamarind paste
- 10 Curry leaves
- 2 Red onions (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 2 tsp Chili powder
- 2 tsp Coriander powder
Cooking Method
- The Architect Fry onions for 12 minutes until they are a deep caramel brown.
- The Bloom Add spices and a 30ml splash of water to form a dark, oily paste.
- The Sear Add chicken and curry leaves; stir for 5 minutes to seal and coat in the spices.
- The Simmer Pour in 300ml water and tamarind; simmer covered for 20 minutes.
- The Final Flourish Finish with a squeeze of fresh lime juice.
