Ingredients

  • 400g Mixed Seafood (Prawns, Squid, Scallops)
  • 2 Red onions (pureed)
  • 6 cloves Garlic (minced)
  • 200ml Double cream
  • 100ml White wine
  • 50g Butter
  • 1 tsp Nutmeg
  • 1 tsp Black pepper
  • 1 tsp Ground Ginger

Cooking Method

  1. The Architect Fry onion puree in butter for 10 minutes until it turns into a dark, sweet jam.
  2. The Bloom Add spices and garlic with a 40ml splash of wine to form a fragrant gold paste.
  3. The Swell Pour in the remaining wine and stock; boil for 3 minutes until reduced.
  4. The Marriage Add the seafood and cream; simmer for 5 minutes then toss with hot linguine.
  5. The Final Flourish Top with a massive hit of raw parsley, lemon zest, and fresh black pepper.
