Ingredients
- 400g Mixed Seafood (Prawns, Squid, Scallops)
- 2 Red onions (pureed)
- 6 cloves Garlic (minced)
- 200ml Double cream
- 100ml White wine
- 50g Butter
- 1 tsp Nutmeg
- 1 tsp Black pepper
- 1 tsp Ground Ginger
Cooking Method
- The Architect Fry onion puree in butter for 10 minutes until it turns into a dark, sweet jam.
- The Bloom Add spices and garlic with a 40ml splash of wine to form a fragrant gold paste.
- The Swell Pour in the remaining wine and stock; boil for 3 minutes until reduced.
- The Marriage Add the seafood and cream; simmer for 5 minutes then toss with hot linguine.
- The Final Flourish Top with a massive hit of raw parsley, lemon zest, and fresh black pepper.
