Ingredients: 800g White beans (canned/rinsed), 3 Large onions (pureed), 4 cloves Garlic, 1 Red pepper (diced), 2 tbsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Dried Mint, 100ml Extra virgin olive oil, 200ml Veg stock, 1 tbsp Honey...

Ingredients

  • 800g White beans (canned/rinsed)
  • 3 Large onions (pureed)
  • 4 cloves Garlic
  • 1 Red pepper (diced)
  • 2 tbsp Smoked paprika
  • 1 tsp Chili flakes
  • 1 tsp Dried Mint
  • 100ml Extra virgin olive oil
  • 200ml Veg stock
  • 1 tbsp Honey

Cooking Method

  1. The Architect Fry onion puree in half the oil for 15 minutes until it turns into a sweet golden jam.
  2. The Bloom Add spices and garlic with a 40ml splash of stock; the reaction will release the smoky mint perfume.
  3. The Marriage Mix beans, onion jam, and remaining stock in a clay dish.
  4. The Scorch Drizzle with honey and remaining oil; roast at 200°C for 30 minutes until the top is charred and rock-hard.
  5. The Final Flourish Finish with a massive hit of raw fresh coriander matchsticks.
