Ingredients: 1 Whole Chicken (spatchcocked), 2 tbsp Chili powder, 1 tsp Cumin, 1 tsp Dried Oregano, 1 tsp Garlic powder, 50ml Olive oil, 2 Limes (juiced), 1 tbsp Honey, 1 Red onion (quartered), 2 cloves Garlic...

Ingredients

  • 1 Whole Chicken (spatchcocked)
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 1 tsp Garlic powder
  • 50ml Olive oil
  • 2 Limes (juiced)
  • 1 tbsp Honey
  • 1 Red onion (quartered)
  • 2 cloves Garlic

Cooking Method

  1. The Coat Whisk oil, lime juice, honey, and spices with a tiny 15ml splash of water to form a thick red lacquer.
  2. The Scorch Rub the lacquer heavily into the chicken; roast at 200°C for 40 minutes until skin is charred and blackened.
  3. The Slow Swell Add the onions and garlic to the pan halfway through; they will cook in the spicy rendered fat.
  4. The Marriage Baste the bird with the pan juices for the final 5 minutes.
  5. The Final Flourish Top with a massive hit of raw fresh coriander and lime zest.
