THE SIGNATURE SPICE-ROUTES RIBS
(Our Play on the Ultimate Mexican Glazed Ribs)
Ingredients: 1kg Pork ribs (individual), 2 tbsp Ancho chili powder, 1 tsp Cumin, 1 tsp Cinnamon, 1 tsp Garlic powder, 100ml Orange juice, 2 tbsp Apple cider vinegar, 2 tbsp Honey, 2 cloves Garlic (minced)...
Ingredients
- 1kg Pork ribs (individual)
- 2 tbsp Ancho chili powder
- 1 tsp Cumin
- 1 tsp Cinnamon
- 1 tsp Garlic powder
- 100ml Orange juice
- 2 tbsp Apple cider vinegar
- 2 tbsp Honey
- 2 cloves Garlic (minced)
Cooking Method
- The Swell Boil ribs in water for 20 minutes to tenderize; drain and dry.
- The Bloom Whisk juice, vinegar, honey, and spices with a 40ml splash of water; boil for 2 minutes until it forms a thick red lava.
- The Scorch Toss the ribs in the fire-silk; roast at 200°C for 25 minutes until blackened and charred.
- The Marriage Baste with the tray juices every 10 minutes until lacquered.
- The Final Flourish Top with a massive hit of raw fresh coriander and lime zest.
